I tried this recipe on thepioneerwoman.com. It is delicious!!!!!! However, for those of you who might be tempted to try it, I have a hint. First, fewer noodles. Fewer noodles equals more cheesy yummness per noodle. Also, I put in a ton of pepper in the ricotta sauce because there really isn't that much flavor there. However, if you salt the veggies while they're cooking and add lots of pepper, the parmesan adds the necessary flavor boost. Also, if you have a smallish family, like mine, or lots of little eaters--half the recipe. It makes a ton.
I didn't add green peas--I didn't want to open a bag for a half a cup. Instead, I added another zuchinni. And I used whole wheat penne.
Highly recommend this one.

a reply to your rant about homebirths-It was night and day differnce between my homebirths and my hospital births! soooooo looooved my homebirths!!!! (assisted by certified midwives and about 2 minutes away from the hospital) especially loved not worrying about leaving my other children, my own bed!!!, and the incredible bonding time! and the fact that my midwives didn't treat me like I had no brain.
